BREEDING SYSTEM
“Pergola Abruzzese”. Type of breeding that helps vine’s natural growth.

CULTIVATION
Organic and Biodynamic farming.

HARVEST
Hand pick and selected over mid September to grant alcohol level.

WINE MAKING
Destemmed and softly pressed. Inoculated using Pied de Cuve.
Fermentation runs at temperature controlled between 13° and 14° before being stopped cooling the cuvée down to 2° – 4°.
After bottling fermentation restarts without adding any sugar or yeast.
Using this method wine is not disgorged and lees stay into the bottle.
So higher complexity and aromatic intensity are granted.
Lees also helps to naturally preserve the wine.

PERLAGE
Fine and persistent

ORGANOLEPTIC CHARACTERISTICS
Colour: light pale but impenetrable due to its natural turbidity.
Nose: intense and persistent floral with notes that reminds of jasmine, broom and yellow flowers.
Palate: slightly intense and persistent, fine and fresh with lovely acidity that preserves freshness.

FOOD PARING
Ideal as aperitif, perfect match with entrée and raw fish, shellfish and any main fish dish.

GLASS
Large flute. Tulip-like shape.

6-8° C
